In a small bowl, dissolve yeast and sugar in warm water. Let it sit for about 5-7 minutes until foamy.
In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Stir to form a dough.
Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover it with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.
Punch down the dough and roll it out to about 1/4 inch thickness.
Cut the dough into bite-sized shapes or strips.
Heat olive oil in a frying pan over medium heat. Fry the pieces in batches until golden brown and crispy, about 2-3 minutes per side.
Drain on paper towels and let cool slightly before serving.
