Wash and peel the carrots thoroughly.
Core and chop the apple if using.
Peel the ginger piece if using.
In a juicer or blender, combine the carrots, apple, and ginger. Add a little water to help blend if necessary.
Juice or blend until smooth. If blending, strain the mixture through a fine sieve or cheesecloth to remove pulp for a smooth juice.
Squeeze the lemon juice into the carrot juice and stir well.
Serve chilled or over ice for a refreshing drink.
