In a small bowl, mix lukewarm water, yeast, and sugar. Let sit for 5–10 minutes until foamy.
Prepare the Dough:
In a mixing bowl, combine flour, baking powder, and salt. Add cheese and poppy seeds. Stir in the yeast mixture and vegetable oil. Mix until a soft dough forms.
Rest & Roll Out:
Cover the dough and let it rest for 20–30 minutes. Roll it out thinly on a floured surface (about 3 mm thick).
Cut & Top:
Cut into desired shapes (squares or rounds). Place on a lined baking tray. Sprinkle with extra poppy seeds if desired.
Bake:
Preheat oven to 180°C (350°F). Bake crackers for 15–18 minutes, or until golden and crisp. Let cool completely before serving.
