Peel and dice the potatoes. Place them in a pot of boiling water and cook until soft (about 15–20 minutes). During the last few minutes of cooking, add the grated carrot to soften slightly. Drain and let them cool for a few minutes.
Mash and Mix:
Transfer the drained potatoes and carrot to a large bowl. Add butter, salt, black pepper, chopped parsley, and cheese. Mash everything together until smooth and well combined.
Shape the Sticks:
Let the mixture cool slightly, then take portions and roll them into stick shapes using your hands. Aim for a thickness similar to thick-cut fries.
Cook the Potato Sticks:
Heat a nonstick skillet over medium heat and lightly grease it with oil or butter. Cook the sticks in batches, turning occasionally, until golden brown and crisp on all sides.
Cool and Serve:
Transfer the finished sticks to a paper towel-lined plate. Let them cool for a few minutes before serving.
