Preheat a non-stick skillet over medium heat.
In a shallow dish, whisk the eggs with salt, pepper, and half the chopped parsley.
Mix the flour and grated cheese in another bowl.
Dip each chicken breast first into the egg mixture, then coat thoroughly with the flour and cheese mixture.
Place the coated chicken breasts into the hot skillet and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
Meanwhile, sauté the diced paprika in a separate pan with a small amount of oil until soft, about 3-4 minutes.
Once the chicken is cooked, top it with the sautéed paprika and sprinkle with the remaining parsley. Serve immediately.
