Heat vegetable oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Add the sliced white onions and green onions to the skillet. Cook for 3-4 minutes until softened and slightly caramelized.
Pour in the Coca-Cola and bring it to a gentle simmer. Let the soda reduce for about 5-7 minutes, stirring occasionally, until it thickens into a syrupy glaze.
Season the fried chicken pieces with salt and pepper, then add them to the skillet, turning to coat each piece evenly with the Coca-Cola glaze and onion mixture.
Continue cooking for another 5 minutes, allowing the glaze to caramelize and stick to the chicken.
Remove from heat and serve immediately.
