Prepare the Cake Batter:
Preheat your oven to 175°C (350°F). Line a small cake tin (approx. 18 cm) with parchment paper or lightly grease it. In a large bowl, combine the flour, baking powder, salt, sugar, and vanilla sugar. Add oil and milk. Mix until a smooth batter forms—do not overmix.
Bake the Cake:
Pour the batter into the prepared tin and smooth the top. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan before removing.
Prepare the Chocolate Filling:
In a saucepan, mix the cocoa powder, sugar, instant coffee, and milk. Heat gently over medium heat, stirring constantly. Once warm, add the chopped dark chocolate. Continue stirring until the mixture is smooth and thickened, about 5–7 minutes. Remove from heat and let it cool slightly to a spreadable consistency.
Assemble the Cake:
Once the cake is cool, slice it in half horizontally (if thick enough) and spread half of the filling inside. Use the remaining filling to coat the top or serve it on the side.
