In a bowl, mix the oats and milk. Let them soak for 1–2 minutes to soften.
Add the eggs, salt, chopped parsley, and half of the cheese. Mix well.
Heat a non-stick skillet over medium heat. Lightly grease if needed.
Pour the mixture into the pan and flatten gently with a spoon to form a round shape.
Cover and cook for 3–4 minutes until the bottom is golden and set.
Sprinkle the remaining cheese on top, cover again, and cook for another minute until the cheese melts.
Slide onto a plate and serve warm.
