Toss the chicken pieces with cornstarch until evenly coated.
Heat a tablespoon of oil in a large skillet or wok over medium-high heat.
Add the chicken and stir-fry until golden and cooked through, about 6–8 minutes. Remove chicken and set aside.
In the same pan, add broccoli florets and stir-fry for 3–4 minutes until bright green and tender-crisp.
Return the chicken to the pan and add roasted cashews.
Stir everything together and cook for another 1–2 minutes to combine flavors.
Serve immediately with steamed rice or noodles.
