Soft Apple Cinnamon Streusel Loaf with Crumbly Topping

Prepare the streusel topping: In a medium bowl, combine the sugars, flour, and cinnamon. Add the cold butter and use your fingertips or a pastry cutter to mix until the mixture resembles coarse crumbs. Refrigerate while preparing the loaf.

Preheat oven: Set oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper.

Make the loaf batter: In a large mixing bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in the vanilla.

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, alternating with the yogurt. Stir until just combined.

Gently fold in the diced apples. Pour the batter into the prepared loaf pan and smooth the top.

Sprinkle the chilled streusel evenly over the batter.

Bake: Place the pan in the center of the oven and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, loosely cover with foil during the last 10 minutes.

Cool: Let the loaf cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
