Place the cubed chuck roast at the bottom of the crock pot.
Add the carrots, celery, onion, mushrooms, and minced garlic on top.
Pour in the beef broth and sprinkle the dried thyme over the ingredients.
Add the rinsed barley.
Season with salt and pepper. Stir gently to combine everything evenly.
Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender and barley is cooked.
Adjust seasoning before serving.
