Nostalgic Slow Cooker Stew That Warms the Heart and Home

Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides for extra flavor, then transfer to the slow cooker.

In the same skillet, sauté onion, garlic, carrots, and celery until softened. Add to the slow cooker.

Add potatoes, diced tomatoes, beef broth, thyme, rosemary, salt, and pepper to the slow cooker. Stir gently to combine.

Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the meat is tender and vegetables are cooked through.

Taste and adjust seasoning if needed before serving.
