High-Protein Quinoa Crepes: A Quick and Gluten-Free Delight

Ingredients:

100g quinoa

2 tablespoons oat flour

250 ml water

1 tablespoon olive oil

A pinch of salt

How to make:

Rinse the quinoa thoroughly and cook it in 250 ml of water until tender (about 15 minutes). Drain any excess water.

Let the cooked quinoa cool slightly, then transfer it to a blender or food processor.

Add oat flour, olive oil, salt, and blend until you get a smooth batter. Add a little water if needed to reach crepe batter consistency—thin enough to spread in the pan.

Heat a non-stick skillet over medium heat and lightly grease it with olive oil.

Pour a small amount of batter into the skillet, swirling to create a thin, even layer.

Cook for 2-3 minutes on one side until the edges lift and the bottom is golden. Flip carefully and cook another 1-2 minutes.

Repeat with remaining batter.
