Preheat the oven:
Set your oven to 200°C (390°F) and line a baking tray with parchment paper.
Prepare the filling:
In a bowl, mix the diced ham and Emmental cheese. Add a small pinch of salt and stir to combine.
Cut the pastry:
Unroll the puff pastry and cut it into even rectangles or squares, depending on your preferred size of dumplings.
Assemble the dumplings:
Place a spoonful of the ham and cheese mixture in the center of each piece. Fold the pastry over to form a pocket (triangle or rectangle) and press the edges with a fork to seal.
Brush with egg wash:
In a small bowl, whisk the egg yolk with the tablespoon of milk. Brush this mixture over the tops of the dumplings for a golden finish.
Bake:
Place the dumplings on the prepared tray and bake for 15–20 minutes or until golden brown and puffed.
