Grilled Chicken Salad with a Zesty Twist

Prepare the Chicken:
In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Rub this mixture all over the chicken breasts.
Preheat a grill or grill pan over medium-high heat. Cook the chicken for 5–6 minutes per side or until fully cooked. Let it rest for 5 minutes, then slice thinly.

Make the Dressing:
In a small bowl or jar, whisk together olive oil, lemon juice, mustard, honey, salt, and pepper until well combined.

Assemble the Salad:
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion. Drizzle with dressing and toss gently.
Top with sliced grilled chicken, avocado, and cheese if using. Serve immediately.
