Rinse the purslane well to remove any soil or debris.
Bring 2 cups of water to a gentle boil in a small pot.
Add the purslane and ginger (if using), then lower the heat to a simmer.
Simmer for 5–7 minutes, then remove from heat and steep for another 3 minutes.
Strain into a cup and sweeten with honey if desired. Enjoy warm.
