Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
In a bowl, combine the boiled mashed potato, cream cheese, and salt until smooth and well mixed.
Shape the mixture into small balls or patties.
In a separate bowl, mix breadcrumbs or crushed cornflakes with black pepper and dried herbs if using.
Roll each potato ball in the breadcrumb mixture, pressing lightly to coat evenly.
Place the coated potato bites on the baking sheet and lightly brush or spray with olive oil.
Bake for 10 minutes or until golden brown and crispy on the outside.
