Ingredients:

6 slices of mozzarella cheese

1½ cups cooked shredded or grilled chicken

¼ cup cooked bacon, crumbled (about 2–3 slices)

1 tablespoon ranch dressing (low-carb if preferred)

1 teaspoon finely chopped green onion

How to make:

Preheat a non-stick skillet or griddle over medium heat.

Place a slice of mozzarella directly into the pan and allow it to melt and bubble slightly (about 1–2 minutes) until the edges are golden but still pliable.

Once the cheese slice is melted, quickly add a spoonful of shredded chicken, a pinch of crumbled bacon, a small drizzle of ranch dressing, and a sprinkle of green onion in the center.

Using a spatula, carefully lift one side of the cheese and roll it over the filling to form a tight roll-up. Remove from heat.

Repeat for all slices.

Let them cool for a minute to firm up, then serve warm or at room temperature.
