Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the peanut butter, softened butter, and powdered sugar until smooth and fluffy.
Mix in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the peanut butter mixture, stirring until combined.
Fold in the mini chocolate chips evenly throughout the dough.
Roll the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
Bake for 10-12 minutes until the edges are set but the centers remain soft.
Remove from the oven and allow the cookies to cool for 5 minutes on the baking sheet.
While still warm, roll each cookie in powdered sugar to create the “snowball” effect. Place on a wire rack to cool completely.
Once cool, roll the cookies in powdered sugar again for a festive, snowy finish.
