Heat olive oil in a large pan over medium heat. Add diced onion and garlic; sauté until softened.

Add ground lamb (or beef), cook until browned, breaking up the meat with a spoon.

Stir in tomato paste, frozen carrots, peas, and corn. Season with salt and pepper. Cook for 5 minutes until vegetables are heated through.

Meanwhile, boil potatoes in salted water until tender (about 15 minutes). Drain well.
