Preheat oven to 180°C (350°F) and line a loaf pan with parchment paper.
In a large bowl, whisk together eggs, oil, sugar, and vanilla.
Add the grated carrot, zucchini, and mashed banana. Mix well.
Stir in flour, baking powder, cinnamon, nutmeg, and salt.
Fold in optional nuts or raisins if using.
Pour batter into prepared pan.
Bake for 40–45 minutes, or until a toothpick comes out clean.
Let cool slightly before slicing and serving.
