Ingredients:
For the Soup (serves 4–6):

2 red onions, thinly sliced (≈300 g)

3 medium potatoes, peeled and diced (≈450 g)

3 stalks celery, sliced (≈150 g)

1 large carrot, peeled and sliced (≈100 g)

2 bell peppers (any color), diced (≈300 g)

1 medium zucchini, diced (≈200 g)

2 L (8 cups) vegetable broth or stock

2 tsp garlic powder (or 2 fresh garlic cloves, minced)

1–2 tsp dried thyme (or 1 Tbsp fresh thyme)

Salt and freshly ground black pepper, to taste

1–2 Tbsp olive oil
