Savory-Sweet Baked Oat and Fruit Muffins

Preheat your oven to 180°C (350°F) and lightly grease a muffin tin with avocado oil.

In a mixing bowl, combine the rolled oats, baking powder, and ground cinnamon.

In another bowl, whisk the eggs, whole milk, honey, and mashed bananas until smooth.

Pour the wet mixture into the dry ingredients and stir gently until just combined.

Fold in the diced apple and chopped nuts.

Add the avocado oil and mix lightly to incorporate.

Spoon the batter evenly into the prepared muffin tin, filling each cup about ¾ full.

Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Remove from oven and allow muffins to cool slightly before removing from the tin.
