Savory Garlic Herb Roasted Vegetables

Preheat the oven to 425°F (220°C).

In a large mixing bowl, combine the cubed potatoes, sliced carrots, and zucchinis.

Drizzle olive oil over the vegetables and add the minced garlic. Toss everything to ensure even coating.

Season with salt, pepper, and dried herbs if using. Toss again to distribute the seasoning.

Spread the vegetables in a single layer on a baking sheet lined with parchment paper for easy cleanup.

Roast in the preheated oven for 25–30 minutes, stirring halfway through, until vegetables are tender and golden brown on the edges.

Remove from the oven and garnish with fresh parsley before serving.
