In a saucepan, heat water, butter, and a pinch of salt until the butter melts and the mixture is hot but not boiling.
Remove from heat and immediately add the flour and vanilla sugar all at once. Stir vigorously until the dough forms a ball and pulls away from the sides of the pan.
Let the dough cool slightly, then beat in the egg until fully incorporated and the dough is smooth.
Heat a small amount of vegetable oil in a non-stick pan over medium heat.
Drop spoonfuls of dough into the pan and flatten slightly. Cook each side for 2-3 minutes until golden brown and cooked through.
Remove and let cool briefly before serving with coffee or tea.
