Grate the zucchini, potatoes, and carrots. Squeeze excess moisture from the zucchini and potatoes using a clean cloth or paper towel.
In a large bowl, combine grated vegetables, chopped onion, eggs, and breadcrumbs. Mix well.
Add cheese, parsley, salt, and pepper. Stir until evenly combined.
Heat a non-stick pan over medium heat with a little oil. Spoon portions of the mixture into the pan, flattening slightly to form patties.
Cook patties for about 4-5 minutes on each side until golden brown and cooked through.
Serve warm with your favorite sauce or salad.
