Preheat the oven to 180°C (350°F).
Chop broccoli, cauliflower, onion, carrot, and garlic finely.
Heat vegetable oil in a pan over medium heat and sauté onion, carrot, and garlic until soft.
Add spinach and cook until wilted, then remove from heat.
Boil or steam broccoli and cauliflower until just tender.
In a bowl, beat the eggs and mix in sour cream, salt, and pepper.
Cut chicken fillets into bite-sized pieces and lightly season with salt and pepper.
In a greased baking dish, layer the chicken pieces, sautéed vegetables, steamed broccoli, and cauliflower.
Pour the egg and sour cream mixture evenly over the top.
Sprinkle mozzarella and breadcrumbs on top.
Drizzle a little olive oil over everything for extra crispiness.
Bake in the oven for about 30-35 minutes until the top is golden and chicken is cooked through.
