Moist Coffee and Cocoa Loaf Cake

Preheat the Oven: Preheat your oven to 180°C (350°F). Grease and line a loaf tin (about 9x5 inches).

Mix Wet Ingredients: In a large bowl, whisk the eggs and sugar until light and fluffy. Add the oil, yogurt, and vanilla. Mix until smooth.

Combine Dry Ingredients: In a separate bowl, sift together flour, cocoa powder, baking powder, instant coffee, and salt.

Make the Batter: Gradually fold the dry ingredients into the wet mixture. Mix until just combined (do not overmix).

Bake: Pour the batter into the prepared loaf tin and smooth the top. Bake for 45–50 minutes or until a skewer inserted in the center comes out clean.

Cool and Serve: Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
