Mexican Taco Lasagna

Preheat oven to 375°F (190°C).

In a skillet over medium heat, sauté onion and garlic until fragrant.

Add ground beef and cook until browned. Drain excess fat.

Stir in taco seasoning and ½ cup of water. Let simmer 5 minutes.

Add black beans, corn, and 1 cup of salsa. Stir to combine and remove from heat.

In a greased baking dish, layer 2 tortillas at the bottom.

Add a portion of the beef mixture and sprinkle with cheese.

Repeat layers (tortillas, beef, cheese) until ingredients are used up—finish with cheese on top.

Bake for 20–25 minutes, or until bubbly and golden.

Let rest for 5 minutes. Garnish with fresh cilantro and serve with sour cream or avocado.
