Hearty Jägerkohl (German Cabbage Stew)

In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pot.

Add the ground beef to the pot, season with salt and pepper, and cook until browned. Remove and set aside with the bacon.

In the same pot, sauté the diced onion until soft. Add the cabbage and potato, and cook for 5 minutes, stirring occasionally.

Return the bacon and ground beef to the pot. Add the kielbasa slices and pour in the beef broth.

Optional: Add a bay leaf or pinch of caraway seeds.

Bring to a boil, then reduce heat to low and simmer uncovered for 25–30 minutes, or until the vegetables are tender and flavors have melded.

Adjust seasoning to taste. Remove bay leaf if used. Serve warm.
