In a small saucepan, combine honey, lemon juice, and grated ginger.
Warm gently over low heat for about 5 minutes, stirring occasionally. Do not boil — just warm enough to mix well and release flavors.
Remove from heat and let cool to room temperature.
Strain the syrup if desired to remove ginger bits.
Pour into a clean jar or bottle and store in the refrigerator.
How to Use
Take 1 tablespoon of syrup 2–3 times a day.
