Rinse and pat dry the small potatoes. Boil them in salted water for about 8-10 minutes until just tender. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add the steak bites, season with salt and pepper, and sear for 2-3 minutes per side until browned but still juicy inside. Remove steak from skillet and set aside.
In the same skillet, melt the butter over medium heat. Add minced garlic and herbs if using, cooking for 1 minute until fragrant.
Add the boiled potatoes to the skillet and sauté until they develop a crispy, golden crust, about 5-7 minutes. Season with salt and pepper.
Return the steak bites to the skillet and toss everything gently to coat in the garlic butter sauce. Cook for another 1-2 minutes to warm through.
Serve immediately, garnished with fresh herbs if desired.
