Preheat oven to 175°C (350°F). Grease a loaf pan or line with parchment paper.
In a large bowl, whisk the eggs until fluffy.
Add melted coconut oil, almond milk, and honey/maple syrup (if using). Mix well.
In a separate bowl, combine coconut flour, baking powder, and salt.
Gradually add the dry ingredients to the wet, stirring until smooth and well combined. The batter will be thicker than traditional bread batter.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Let cool before slicing.
