Heat olive oil in a large skillet over medium heat.
Add the chopped onion and sauté until translucent and fragrant, about 3–4 minutes.
Add the diced potatoes to the skillet, stirring occasionally, and cook until tender and lightly golden, about 15 minutes. Cover the pan to help the potatoes steam and cook through faster.
Stir in the chopped spinach and cook until wilted, about 3–5 minutes.
Season with salt and black pepper to taste. Mix well and cook for another minute to combine flavors.
Remove from heat and serve warm.
