In a skillet over medium heat, cook the Italian sausage until browned, breaking it apart as it cooks. Drain excess fat.
Add the diced onions to the sausage and cook until they soften, about 3-4 minutes.
Reduce heat to low and add the cheese block to the pan. Stir continuously until the cheese melts and the mixture becomes smooth and creamy.
Mix well to combine all ingredients evenly.
Serve warm with tortilla chips, crackers, or fresh vegetables.
