Tsukune are tender Japanese chicken meatballs traditionally served on skewers or in hot pots. This version blends juicy ground chicken with umami-rich ingredients like miso and negi, then simmers them in a glossy soy-mirin glaze. Perfect as an appetizer or as part of a Japanese-style meal!

Ingredients
For the Meatballs (makes about 12):
500 g ground chicken

100 g grated Hokkaido onion (about ½ medium onion, cooled before grating)

50 g finely chopped Japanese negi (white and green parts)

5 g white miso paste

1 tsp fine salt

5 g mirin or sake

10 g sake

10 g light soy sauce

Freshly ground black pepper, to taste

For the Soy-Mirin Sauce:
3 tbsp mirin

2 tbsp sake

2 tbsp soy sauce

1 tbsp sugar

1 tsp grated ginger (optional, for aroma)
