Cheesy Vegetable Egg Bake

Preheat oven to 180°C (350°F).

In a large bowl, whisk eggs with cream, flour, oregano, salt, and pepper.

Stir in grated potatoes, zucchini, chopped broccoli, tomato, and one bunch of chopped parsley.

Mix in half the shredded cheddar.

Pour the mixture into a greased baking dish.

Sprinkle the remaining cheddar on top.

Bake for 35–40 minutes or until the top is golden and set.

Garnish with fresh parsley before serving.
