Chow Chow is a traditional North American pickled relish celebrated for its vibrant tang and fresh garden flavors. Rooted in late summer harvests, this relish highlights green tomatoes as the main ingredient, offering a perfect balance of tartness that complements a variety of dishes. Unlike sweeter relishes, Chow Chow leans into its tangy profile, preserving the crisp and lively essence of fresh produce.
Ingredients:
4 cups chopped green tomatoes
1 cup chopped cabbage
1 cup chopped green bell pepper
1 cup chopped onion
½ cup chopped celery
2 cloves garlic, minced
2 cups white vinegar
1 cup sugar
2 tablespoons mustard seeds
1 tablespoon turmeric powder
1 teaspoon celery seeds
1 teaspoon salt
How to make:
Combine green tomatoes, cabbage, bell pepper, onion, celery, and garlic in a large bowl. Mix well.
In a saucepan, bring vinegar, sugar, mustard seeds, turmeric, celery seeds, and salt to a boil, stirring until sugar dissolves.
Pour the hot vinegar mixture over the vegetable mix and stir thoroughly.
Transfer the mixture to sterilized jars, leaving some headspace.
Seal the jars and refrigerate for at least 1 week before serving to allow flavors to develop.
For longer storage, process jars in a boiling water bath for 10 minutes and store in a cool, dark place.
