In a dry pan over medium heat, lightly toast the sesame seeds, peanuts, almonds, pistachios, and hazelnuts for 2–3 minutes until fragrant. Let them cool slightly.
In a food processor, add the pitted dates, toasted nuts and seeds, cinnamon, and cardamom.
Blend until the mixture becomes sticky and starts to clump together. Scrape the sides as needed.
Scoop out small amounts and roll into bite-sized balls using your hands.
Optionally, roll the balls in extra sesame seeds or crushed nuts for added texture.
