This veggie frittata is my go-to weekend dinner! Packed with fresh broccoli, cauliflower, peppers, and tomatoes, plus eggs for protein, it’s a colorful, light, and satisfying meal — no meat needed. Everyone who tries it asks for seconds!

Ingredients
400g broccoli, cut into small florets

250g cauliflower, cut into small florets

1 onion, diced

1–2 peppers (preferably different colors), sliced

4 eggs

5 small tomatoes, halved or quartered

Salt and pepper to taste
