Ingredients
For the Omelette:

2 large eggs

1 tablespoon milk (optional, for fluffiness)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup cherry tomatoes (halved)

1/4 cup spinach (chopped)

1/4 cup bell peppers (sliced)

1/4 cup onion (diced)

1 teaspoon olive oil or butter

1 teaspoon hot sauce (optional, for topping)

For the Sides:

1/2 avocado (sliced)

1 slice sourdough bread (toasted)

1 teaspoon butter or drizzle of olive oil
