Preheat oven to 375°F (190°C).
In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant and translucent.
Add the sausages and cook until browned on all sides. Remove sausages and slice into pieces.
In the same pot, add potatoes, carrots, and kale. Pour in broth, add thyme, salt, and pepper. Cover and simmer for about 15 minutes or until vegetables are tender.
Return the sausage pieces to the pot and stir to combine.
Transfer the mixture to a baking dish. If using, cover with puff pastry, seal edges, and cut a few slits on top to vent steam.
Bake for 25–30 minutes or until the pastry is golden brown and crispy.
Let cool slightly before serving.
