In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Marinate chicken in this mixture for at least 30 minutes.
Heat a grill or skillet over medium-high heat. Cook the chicken slices for 4-5 minutes per side until fully cooked.
For the tzatziki, combine Greek yogurt, feta, cucumber, garlic, lemon juice, olive oil, salt, and pepper in a bowl. Mix until smooth.
Warm pita bread on the grill or in the oven.
Assemble gyros by placing chicken on pita, then adding red onion, tomatoes, lettuce, and a generous dollop of creamy feta tzatziki.
