In a small bowl or jar, whisk together the vinegar, mustard, salt, and pepper.
Slowly drizzle in the oil while continuing to whisk, or shake vigorously in a jar with a lid until the mixture is emulsified.
Taste and adjust seasoning as needed. Add herbs, garlic, or sweeteners as desired.
Use immediately or refrigerate for up to 5 days. Shake or whisk again before serving.
