Ingredients:
½ cup unsalted butter, at room temperature
1 ⅔ cups granulated sugar
2 large eggs
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
2 cups peeled and chopped apples (firm varieties like Granny Smith or Honeycrisp work best)
Optional: ½ cup chopped walnuts or pecans
How to make:
Preheat your oven to 175°C (350°F). Grease a 9-inch round cake pan or line it with parchment paper.
In a large bowl, cream the butter and sugar until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
Gradually add the dry ingredients to the wet mixture, mixing just until combined.
