Clean the Portobello mushrooms with a damp cloth and remove the stems.
In a bowl, whisk together olive oil, balsamic vinegar, garlic, oregano, soy sauce, salt, and pepper.
Place the mushrooms gill side up in a dish and pour the marinade over them. Let marinate for at least 20–30 minutes.
Preheat the grill to medium heat.
Grill the mushrooms for 4–5 minutes per side until tender and slightly charred.
Serve warm as a main dish or burger substitute.
