Preheat your oven to 175°C (350°F) and grease a loaf or round cake pan.
In a large bowl, whisk together flour, sugar, baking soda, and salt.
In a separate bowl, combine almond milk, oil, lemon juice, lemon zest, vanilla extract, and vinegar.
Pour the wet ingredients into the dry and mix until just combined.
Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick comes out clean.
Let the cake cool completely before slicing.
