¼ cup (60ml) fresh lime juice
2 tablespoons (30ml) olive oil
½ teaspoon ground cumin
Salt and black pepper to taste
How to make:
In a large bowl, combine the black beans, mango, avocado, red bell pepper, red onion, and jalapeño.
In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
Pour the dressing over the salad and sprinkle in the cilantro.
Gently toss everything together, being careful not to crush the avocado.
Taste and adjust seasoning. Serve immediately or chill for up to 1 hour.
