Grate the zucchini and squeeze out any excess water using a clean kitchen towel or paper towel.
In a large bowl, combine the grated zucchini, minced garlic, eggs, grated cheese, flour, and minced meat.
Add the parsley, salt, black pepper, and paprika to the mixture, and stir until well combined.
Heat vegetable oil in a frying pan over medium heat.
Using a spoon, drop spoonfuls of the mixture into the hot oil, flattening them slightly to form fritters.
Fry for 3-4 minutes on each side, or until golden brown and cooked through.
Remove from the pan and drain on paper towels to remove excess oil.
Serve warm and enjoy!
