1 cup (200 g) dry brown lentils, rinsed
4 cups (1 L) water, for cooking lentils
5 medium potatoes (about 750 g), peeled and chopped
1 tsp salt, for lentils & potatoes
1 tbsp olive oil
1 small onion, finely chopped
3 garlic cloves, minced
200 g mushrooms, sliced
2 tbsp rolled oats
1 tbsp breadcrumbs
1 tbsp soy sauce
1 tsp Italian herb blend (oregano, basil, thyme)
Freshly ground black pepper, to taste
2 tbsp butter
100 ml milk (dairy or plant-based), for mash
